Usually, we make biryani in vessels. I try out layered Veg Biryani, in pressure cooker with the ingredients available with me . This recipe is the one ,that can be made at home in less time with pressure cooker to save time.
I have used my leftover cooked Basmati rice with the leftover veggie (raw ones) with necessary condiment and other ingredients.
The outcome is quite aromat , delicious and so tasty. Everyone should try the recipe , to please their family members and children.

- 1 cup basmati rice cooked
- 1 1/2 cup mixed vegetables
- 1 medium onion sliced thinly
- 1 small onion finely chopped
- 1 tomato chopped
- 1 green chilli chopped
- 1 tsp ginger- garlic paste
- 2 tbsp fresh mint leaves crushed
- 1/2 cup warm milk
- 1/2 tsp biryani masala
- 12-13 saffron strands
- 2 tbsp ghee
- As per taste Salt
- Whole spices
- 1 bay leaf
- 1/2 black cardamom
- 2 inch cinnamon
- 1/2 tsp sahjeera/cumin seeds
- 5 cloves
- 3 green cardamom
- For curd masala
- 2 tbsp curd/ yoghurt
- 1/2 tsp Kashmiri red chilli powder
- 1/2 tsp biryani powder
Steps to make to make Veg Dum Biryani
- Mix well 1 tsp melted ghee, 1/2 tsp garam masala powder and salt as required,with the leftover rice and keep aside.
Mix all the ingredients of curd masala and keep aside.
Soak the saffron strands in warm milk. - Heat rest of the ghee in a kadhai and fry and caramelize the sliced onions.
- To the remaining ghee in the same kadhai, add all the wholesome garam masala. Saute in low heat for 1 to 2 minutes till the aroma comes.
- Add the chopped onions and green chilli. Saute till the chopped onions are golden.
- Then add ginger-garlic paste and saute until the rawness is gone.
Add the chopped veggies and fry for 2 -3 minutes.
Then add chopped tomatoes, curd masala and salt. Mix and fry in high flame for 3 minutes. - Then add chopped tomatoes, curd masala and salt. Mix and fry in high flame for 3 minutes.
Take the pressure cooker. Spread the veggie layer first, then rice layer. Again veggies layer and lastly rice layer evenly.
Pour the saffron milk across the inner sides of pressure cooker.
Then spread the crushed mint leaves and caramelized onions evenly on the top. - Pressure cook on low heat (with lid) for 15 minutes. Rest the cooker to release pressure naturally.
Serve hot with raita and/or gravy.
